Who doesn’t love a good breakfast with pancakes, definitely this is a classic for a lot of us, because waking up on a Saturday morning to the smell of freshly fluffy just made pancakes, just meant this was going to be a good weekend. Well, we all have good memories of this, but the thing is, this is not a well balanced and healthy breakfast. When you learn about how your plate should look in every meal, you start to look for options that meet these standards, most people focus on their macros, which are protein, carbs and fats. This makes the perfect excuse to create some good protein pancakes, and what a great idea is to substitute the usual carbs with oats.
This is why I want to share with you this basic recipe for some good pancakes, because it is packed with protein and also very fulfilling, they will make you feel full without the guilt.
This recipe is good for two portions (2-3 pancakes per portion):
– 1 egg
– 1 scoop of whey protein (pick your favorite flavor)
– 1/2 ripe banana
– 2 oz. milk (you can use skim or half-skim)
– 1/2 cup whole oats
Put everything in the blender and mix until you get a consistent texture.
Once you have the mix ready, you can let it sit for a few minutes, after that cook them in a griddle as you normally would. One healthy twist is to use avocado or grape-seed oil, for instance there are even some versions that don’t contain propellants. In here you can find and excellent choice of grape-seed oil.
You can accompany with low glycemic load fruit like apples or prunes, and some raw honey.
